Knife Skills

How do you select the most important tool in your kitchen? What are the differences between each brand? What knife is best for you? What makes up a basic set? We'll learn the correct way to handle, maintain and sharpen your knives, as well as the classic techniques for slicing, dicing, cubing and mincing and how to handle different vegetables, fruits and meats.

Sushi Class

A feast for the eyes as much as a feast for the palate! Sushi is seasoned rice accompanied by delicious, fresh ingredients and formed into decorative, edible packages. It is fast and healthy food that can be playful as well. In this class we’ll learn the basics of makizushi (roll) and nigirizushi (finger-pressed) using various ingredients such as sushi-grade fish, vegetables, omelet, and more. We’ll also create original dessert sushi inspired by rice-based sweets found throughout Asia.

The Flavors of Southeast Asia

Southeast Asian food draws its influence from China to France, from the spices of India to the herbs of Vietnam. What ties it altogether are the four flavors---hot, sour, sweet, and salty---that form the foundation of family-style meals. We’ll be using regional ingredients such as fish sauce, bird chilies, palm sugar, kaffir lime leaves, lemongrass, and shrimp paste. We’ll take a culinary trip from Southern China to Indonesia to see how history and cultures influence the food of this region.
